Normally, I’m a purist, but I decided to step outside my norm. I used puff pastry and shredded Colby Jack and sharp cheddar cheese.
Ingredients for grilled cheese:
2 sheets of puff pastry
1lb of sharp cheese
1lb of Colby jack
Cheese
1:2 stick of butter
Garlic powder
tomato basil soup:
1 can of chicken broth (I used 1 cup of water and 1 tblsp of chicken base)
1 large can of whole tomatoes
Basil leaves
1 stick of salted butter
1 tblsp minced garlic
1 tblsp minced onions
Soup instructions:
Melt butter in pot and add chopped basil leaves, minced garlic and onions. Cook until onions and garlic are translucent.
Add your broth/chicken base + water mix and cook for 5 mins.
Add can of tomatoes, including juice. Let cook for 10 mins on low-medium.
Add to blender and purée tomatoes. Return to pot and add a splash of heavy whipping cream for thickness.
Add bay leaf. Cover and simmer
Grilled cheese:
Add parchment paper on baking sheet.
Unroll one sheet of puff pastry and add shredded cheese.
Cover shredded cheese with second sheet of puff pastry. Seal perimeter by pressing the sides with fork.
Melt 1/2 of butter in microwave. Add garlic powder and mix. Brush garlic butter on top of puff pastry.
Bake at 400° for 20 mins.

Disqualified as it was baked not grilled… I have a feeling the chef was baked too. /s Looks delicious though
